2. Vicia faba - the field bean, this archaic food plant of first order (Christ) was until the 16th and 17th century one of the most important in Central Europe, the bean per se. ... It was more and more replaced by Garden beans (Phaseolus), the potato and corn and consequently degraded to stockfeed. The name Saubohne (Sow bean) (in other places Schweinebohne (pig bean)) became common in Basel only around 1800. Other varieties are to some extent called Pferdebohne (Horse bean), Rossbohne, (also Pferdewicke, Sauwicke), Eselsbohne, Viehbohne (e.g. in Thuringia). Only recently have the large-seeded types of especially bred varieties such as Grossbohne, Grosse Gartenbohne, Buff or Puffbohne gained acceptance for human consumption (in the cities), whereas varieties of lower quality had to serve as food for prisoners of war. As a green vegetable are used mainly the unripe, thin skinned seeds of the large flat-seeded field beans (in Northern Germany "Dicke Bohnen" or Lederne Jungens"), also as gruel or soup.
