Aldaric acids are a group of sugar acids, where the terminal hydroxyl groups of the sugars have been replaced by terminal carboxylic acids, and are characterised by the formula HOOC-(CHOH)n-COOH, suhkurhapete rühm, mille puhul suhkrute terminaalsed hüdroksüülrühmad on asendatud karboksüülrühmadega.
