At present, Canadian law recognizes three types of evaporated milk, which are classified according to their fat content into regular, skim, and partly skimmed milk.
For concentrated milk compounded with sugar with a fat content by weight lower than or equal to 9,5 %, the component mentioned in paragraph 1 (a) shall be fixed per 100 kilograms of the whole product.
