  • Lambic - Belgiast pärit eriline õlletüüp, mille pruulimisel kasutatakse odralinnaseid ja 40% ulatuses linnastamata nisu. Kääritamisel ei kasutata puhtaid kultuurpärmitüvesid nagu ale- ja lager-tüüpi õllede puhul, vaid toimub n.ö spontaanne käärimine õhus leiduvate "metsikute" mikroorganismide mõjul. Lambic "küpseb" kuni 3 aastat, kusjuures tema värv, mis alguses on kuldkollane, ajapikku tumeneb. Tugeva hapuka maitsega, humala aroom vähene. Levinud on ka maitsestatud variandid, vt Faro,Gueuze, Framboise, Kriek, White.

  • Today, Belgium has more than a hundred beers which differ from one another by the colour and, above all, by the fermentation process (bottom or top fermentation). Among them, we must mention Gueuze, an exclusive specialty of Brussels and its surroundings which is the only spontaneously fermented beer. Gueuze, that wonderful dark beverage, a bit sparkling and a little acid-tasting is sometimes called "our champagne'' and even "the burgundy of beers". Just like its derivatives it is produced from Lambic. ... After 3 or 4 days of fermentation, the wort transforms into Lambic, a flat beer that can be drunk just as it is. The Lambic is now going to age for 1, 2 or 3 years in the barrels. The blend of Lambics of different ages (bottled manually) will turn into Gueuze. After the bottling, the bottles are corked and the cork is held by a plastic top to prevent it from popping in the summer, due to the pressure caused by heat. The bottles are then stored in the cellar. The blend of different Lambics begins to age and to referment in the bottles, like champagne. After 2 or 3 months, a sediment appears and the beer starts to sparkle and to foam. This Gueuze will improve for another 2 years before being launched on the market.
