Good to know
High levels of zeaxanthin are found in maize (from which it was first isolated) and egg yolk, as well as brightly coloured fruits such as orange and yellow peppers, melons, and oranges. It often occurs naturally with the pigment lutein, of which it is an isomer.
Värvilised on ka mitmed bioaktiivsed ühendid, nagu kurkumiin (E100, kollane, põletikuvastane ühend), luteiin ja zeaksantiin (E161b ja E161h, vajalikud normaalseks nägemiseks), lükopeen (E160d, punane, vähivastane ühend), antotsüaanid (E163, punased kuni violetsed, antioksüdandid).
