  • Sterols exist either as free sterols or as esters of fatty acids. Animal sterols (zoosterols) include cholesterol and lanosterol. The major plant sterol (phytosterol) is beta-sitosterol, while fungal sterols (mycosterols) include ergosterol.
  • The well-known sterol cholesterol is found only in foods of animal origin—meat, egg yolk, fish, poultry, and dairy products. Organ meats (e.g., liver, kidney) and egg yolks have the most cholesterol, while muscle meats and cheeses have less.
