  • BOTRYTIS CINEREA - niiskusseen, mis põhjustab hallitust paljudel puuviljadel, ka veinimarjadel. Esineb kahes vormis - healoomuline aadlihallitus (väärishallitus) ja pahaloomuline hall hallitus. Aadlihallitus areneb hilisel üleküpsenud marjal, kui hommikune kaste ja soojus loovad seene arenguks soodsa keskkonna. Hallitusseen aurustab osa veinimarjas leiduvast veest, kontsentreerides niiviisi marjamahla suhkru - see vähendab happesust ja arendab spetsiifilise lõhna. Tekib eelkõige suure suhkrusisaldusega sortidel (Semillon, Sauvignon Blanc, Muscadelle). Botrytis'e hallitust kasutatakse magusate veinide tootmisel. Hallitus areneb täiuslikult Sauternes'i piirkonnas, kus valmistatakse maailma võluvaimat ja pikaealisimat magusat Sauternes'i-nimelist veini.

  • 1. Cuts of meat from haunches of bovine animals aged at least 18 months, with no visible intramuscular fat (3 to 7 %) and a pH between 5,4 and 5,6; salted, seasoned, pressed, dried only in fresh dry air and developing noble mould (bloom of microscopic fungi). The dry matter in the finished product is between 41 % and 51 %.
  • 2. Botrytis cinerea (gray rot) The grapes are attacked by certain fungi which perforate the skin of the berries and penetrate the fruit marc; as a consequence, the water contained in the ripe grapes evaporates through the porous skin, leading to the shrinking of the grapes to the size of raisins and an increase of the sugar content to 40 % and more. Such a state is called noble rot. Wine made from grapes with noble rot is characterized by the typical Botrytis smell and Botrytis aroma (raisin note), which many consider desirable qualities, and is commercialized under the designation "Beerenauslese" or "Trockenbeerenauslese".
