The carcases of adult bovine animals shall be divided into the following categories :
- carcases of uncastrated young male animals of less than 2 years of age,
- carcases of other uncastrated male animals,
- carcases of castrated male animals,
- carcases of female animals that have calved,
- carcases of other female animals.
