Full-time smokehouse operators will use computers to run selected programs during the smokehouse process. This job will entail the movement of racks of product into and out of the smokehouses and; the constant monitoring and recording of temperatures to maintain quality of product. A smokehouse operator must be able to manage these smokehouses efficiently, safely, and troubleshoot effectively.
